Cajun Tortellini


If you need an easy meal, with few ingredients, then this is the pasta dish for you! The inspiration for this recipe came from a little Italian restaurant in St. Charles, IL in the early 90's. As a family we would eat at Ristorante Chianti quite frequently. My dad would ask the chef for the recipe to different dishes and sometimes he got them and sometimes he didn't. He didn't get the exact recipe for one of our all time favorite tortellini dishes, but the chef gave him a few hints and off to the kitchen mom and dad went to try to mimic the yummy pasta.

Most people have the spices for this recipe already in their pantry….so really all you need are 3 other ingredients. You adjust the heat level to what's comfortable for your family. We like it hot, unless we're coming off a weekend with a stomach bug!

INGREDIENTS:

1 package Buitoni chicken and herb tortellini
1 jar alfredo sauce (I always use a roasted garlic alfredo)
shredded parmesan cheese
cayanne pepper
paprika

DIRECTIONS:

Pre-heat oven to 350 degrees.

Fill a stock pot with water, season with salt, drop a little olive oil in there and let it come to a boil.

Cook pasta according to package directions.

While pasta is cooking, pour jar of alfredo sauce into a saucepan and heat on low heat.

Once pasta is cooked, drain the water. You can either do this next step in the stock pot or transfer to another bowl.

Once pasta is drained, sprinkle cayenne pepper over the pasta and stir to coat. (Use your own judgement!!! You can make this barely spicy, or really spicy depending on how much you add! Take a look at the picture….that's how much I added and our's had a little kick to it!)


Pour warm alfredo sauce over the pasta and stir to combine.

Spray a baking dish with pam and add pasta. Sprinkle parmesan cheese over the top and then sprinkle some paprika to add some color.

Cook for 25-30 minutes.
