Sweet 16


That's right….the Jayhawks are heading to Texas Stadium for the Sweet 16! Friday night we had a yummy pizza dinner and then watched KU beat Western Kentucky. It wasn't a pretty game, but a win's a win! Saturday we watched more basketball and then got ready to meet friends for dinner and a movie. We had a yummy Italian meal and then saw Oz the Great and Powerful. The movie was kind of a disappointment. It just made me really excited for Wicked to come back to town, just in time for my birthday too!

Sunday was extremely lazy! Mike did some work, I watched several episodes of NCIS that I've already seen before, watched some more basketball, and then we went on a drive. Our neighborhood is still in the build out stages, so we headed to the far other side to see what it looked like. We also heard another pool would be open by June, so we went looking for it. It's not started yet, so I'm guessing the June opening probably isn't going to happen. It was a beautiful day for a little drive too. We got home just in time for our Jayhawk tip-off…..watched a terrible first half and then saw a FABULOUS come back to win the game by 12!

Monday was probably the busiest Monday I've had since resigning from my job. My alarm went off at 6 am....but I snoozed until 6:30. I got ready and then headed to my sister's house. She was having her carpets cleaned, but couldn't be home because she had to work, so I sat at her house while it was done. Of course, they started and within 3 minutes their machine broke and had to go get another truck. It took a little longer than usual, but that's okay! I then left, went to Target, the grocery store, and home. Mike had an afternoon doctor appointment to have his ankle checked out. It hasn't felt  good since his last half marathon. The appointment was fine, he didn't care for the doctor, and decided he would just take care of it on his own. I cooked dinner and then we watched the season premier of The Voice.......I know it doesn't sound like a lot in one day, but when you're no longer used to waking up that early and driving far, and being on the go, I was a little tired!

I'm looking forward to this weekend…..Friday for the KU game and Sunday for Easter! It will be a great weekend spent with wonderful family!

Friday Pizza Night is back!


It's been about 3 weeks since we last had a Friday pizza night. One Friday we celebrated my sister's birthday, another my dad's, and another was dinner out with friends. There was a weekend in there when we ordered pizza to go, but it's been a while since I last cooked on a Friday night.

Last night was special too. It was KU's first game of the NCAA tournament. Since the game started late…tip off at 9:06 or something like that…..we ate dinner later than usual. And because it's still Lent, I made a meatless pizza, a Margherita to be exact. I took the easy way out again with the crust and made a yummy appetizer of fried raviolis, which I'll share next week.

MARGHERITA PIZZA


INGREDIENTS:

Pizza crust (I used a Boboli crust)
Pizza sauce
2 roma tomatoes, sliced thin
Fresh basil, shredded or roughly chopped
Shredded mozzarella cheese
Shredded parmesan cheese
Olive oil
Garlic salt

DIRECTIONS:

Preheat oven according to crust packaging.

Brush the edges of the crust with olive oil and sprinkle garlic salt on top. Careful not to sprinkle too much!

Pour pizza sauce over the center of the crust and spread to cover…leaving about an inch or half an inch around the edges.

Sprinkle shredded mozzarella on top of the sauce.

Place sliced tomato over the cheese.

Sprinkle shredded parmesan cheese and a little more mozzarella over the top of the pizza.

Place in oven for 8-10 minutes or according to crust packaging.

Once pizza is out of the oven, sprinkle fresh basil over the top.

Enjoy!

PAY HEED


Mike and I decided a few weekends ago that we were due new KU shirts. He chose one he liked, so did I and we got them just in time for last weekend's Big 12 Championship. I wore my new shirt last Friday. It's pale blue, has the old angry Jayhawk on the sleeve, and says "Pay Heed" on the front. We ordered pizza last Friday night and when I went into our favorite local pizza shop to pick up our pie, the guy behind the counter said "What does Pay Heed mean?" I looked at him a minute because I knew the long line behind me wouldn't appreciate the real answer….so I just said "It's a University of Kansas thing!"


The entire PAY HEED  phrase is this "PAY HEED ALL WHO ENTER, BEWARE OF THE PHOG." Most people have no idea what this means. First of all THE PHOG, refers to Phog Allen Fieldhouse. Phog Allen was the Jayhawk's second ever coach, one with a winning record. He was close with the inventor of the game, Dr. James Naismith, who as I've mentioned before, is the only KU coach with a losing record. The saying basically means, any other team that enters this fieldhouse, better beware of the whopping they'll receive! A replica of the real banner hangs in our game room…..it was one of the BEST Christmas gifts my husband ever gave me!



Today begins 4 straight days of the second & third rounds of the tournament. This week there were four games that were the "first round." I didn't really pay attention to those games, they were on our tv, but I didn't really care about them. I just finished filling out my bracket last night. I realized on Tuesday morning I was being lazy, because my Dad emailed me his picks and bracket. It kind of surprised me that he had beat me to it! Although, I'm pretty sure I owe my love of most sports to him. One of the first times my mom left me home alone with my dad as an infant/toddler, she came home to both of us sitting on the couch, watching football, and eating chips and salsa……….I didn't have any teeth yet! I GREATLY thank him for that day…….I love watching sports, and I love chips and salsa... so much so, Mike proposed to me using chips and salsa and during the month of March! Anyways, back to the point, I love college basketball. Not just at tournament time, but for the entire season. From that first official "Late Night" practice to the final big dance! Even though I didn't graduate from KU, I feel EXTREMELY blessed to have spent two years of my life there. Two years that involved some CRAZY BASKETBALL!

Yes, I have Kansas winning it all.....as my dad said "It's an emotional pick!"

My freshman year, the Jayhawks went to the final four! That was Roy William's last year to coach KU. I watched both those final games at the Granada on Mass St., horribly sick. I actually saw three doctors in one day trying to feel better before those games. Despite feeling terrible, I watched us kill Marquette and then lose against Carmelo Anthony and the Orangemen of Syracuse. It was after that loss that Bonnie Bernstein became invisible. She's the no-longer CBS sportscaster who asked Roy after that loss, "Are you going to UNC now?" To which he responded "I don't give a s*** about North Carolina!" We all know that wasn't true…he left KU and a new era began with BILL SELF.

My sophomore year was not as exciting, but still was a good basketball year. KU rarely has bad years…..there's such a thing as rebuilding…hence losing in the second or third round of the tournament. I attended every home game during the time I went to KU. I camped out with my sorority sisters, attended role calls so our spot wouldn't be taken, and stood for the entire length of the game, every game. That's what students at KU do! I dug up some old college picks and scanned them in…..you can tell which one I didn't feel well in!

Lots of basketball!


We watched a lot of college basketball from Friday night until Sunday afternoon. It was the conference championships weekend and last night was selection Sunday. Can't say I'm too happy about Kansas's region…..it's deja vu all over again……UNC, VCU! I just hope we make it through the first two rounds…..if we can do that, it could be smooth sailing!

Saturday was pretty lazy. We watched basketball, Mike washed his car, and that night we ate at Grimaldi's with new friends. Mike and I are a sponsor couple for couples going through marriage preparation at our church. We met a potential new couple for dinner. We're usually not supposed to do that, but this couple is moving in April and was nice enough to want to meet us just in case we could work out a schedule and meet with them before they move. They were so sweet and mature for their age! Mike and I look forward to taking them through the program, even if we're combining meetings to get finished before they move.

Sunday was much more productive than Saturday! We met all of my in-laws for lunch to celebrate my brother-in-law's birthday. It was a fun visit and great to see my precious nephew! We came home, started laundry, Mike did some work, and we watched more basketball. We saw just enough of the selection Sunday coverage to see that Kansas was the #1 seed in the south region before we had to leave for church.

Cajun Tortellini


If you need an easy meal, with few ingredients, then this is the pasta dish for you! The inspiration for this recipe came from a little Italian restaurant in St. Charles, IL in the early 90's. As a family we would eat at Ristorante Chianti quite frequently. My dad would ask the chef for the recipe to different dishes and sometimes he got them and sometimes he didn't. He didn't get the exact recipe for one of our all time favorite tortellini dishes, but the chef gave him a few hints and off to the kitchen mom and dad went to try to mimic the yummy pasta.

Most people have the spices for this recipe already in their pantry….so really all you need are 3 other ingredients. You adjust the heat level to what's comfortable for your family. We like it hot, unless we're coming off a weekend with a stomach bug!

Hope you enjoy as much as we do!


INGREDIENTS:

1 package Buitoni chicken and herb tortellini
1 jar alfredo sauce (I always use a roasted garlic alfredo)
shredded parmesan cheese
cayanne pepper
paprika

DIRECTIONS:

Pre-heat oven to 350 degrees.

Fill a stock pot with water, season with salt, drop a little olive oil in there and let it come to a boil.

Cook pasta according to package directions.

While pasta is cooking, pour jar of alfredo sauce into a saucepan and heat on low heat.

Once pasta is cooked, drain the water. You can either do this next step in the stock pot or transfer to another bowl.

Once pasta is drained, sprinkle cayenne pepper over the pasta and stir to coat. (Use your own judgement!!! You can make this barely spicy, or really spicy depending on how much you add! Take a look at the picture….that's how much I added and our's had a little kick to it!)


Pour warm alfredo sauce over the pasta and stir to combine.

Spray a baking dish with pam and add pasta. Sprinkle parmesan cheese over the top and then sprinkle some paprika to add some color.

Cook for 25-30 minutes.

UGH...my back hurts!

Why does my back hurt? Because I spent almost all of the weekend either in bed or on a couch. 

Friday night was great fun though!!!! And thank goodness because the rest of my weekend was NOT fun! Friday night my parents picked me up and we headed into town to meet Mike, Tammy, and Keith for dinner at Eddie V's. We were celebrating my dad's birthday which is actually tomorrow. He wanted a nice dinner and that's what he got! I don't really eat seafood and Mike has a shellfish allergy, so even though if was Friday, we both ate the chicken. Oh well! You'd think they would have a pasta or something, but they didn't! It was a great meal and a great dinner out with my family, celebrating my dad! My dad's been through a lot over the past few years. This month 3 years ago, he had surgery for prostate cancer. He had known for almost 6 months that something was wrong, but didn't want to ruin our holidays or family weddings and put himself on the back burner. They found the cancer, did the surgery, and we thought all was going to be fine. Unfortunately, we were wrong. His blood work every 6 months after his surgery showed PSA numbers doubling each time. When a man's prostate is removed, the PSA should pretty much disappear….his didn't. He found out the cancer had come back to the lymph node channels around where the prostate used to live. Around the same time, he had accepted a new job, and he and my mom had bought a lot to build on. There was also some other family things we were all going through. He started radiation pretty soon after that and in May 2012, he went into remission for the second time. He then found out he had skin cancer on his nose and had surgery for that. In July, another company wanted his expertise, so he took a new job helping to start up a new company.  My parents finally were able to move into their beautiful new home in late October 2012, however one week later, my dad tore his meniscus and ACL. In December he underwent knee surgery and in January 2013, we found out his PSA numbers were very low, which was wonderful news!!!! He's been through so much and at times we wondered when he would catch a break……but I think 2013 is going to be a great year for him! My dad is one of the hardest working people I know. Sometimes, he probably works too hard. His goal has always been to provide for his family the best he could and he has done and continues to do a wonderful job of that. When my sister and I were very young and living in Chicago, we had a book called "My Dad is Brilliant." Every page of the book talked about everything this kid's dad could do. We still to this day reference that book and call my dad BRILLIANT…..because he is the smartest person we know! Happy Birthday a day early DAD! I LOVE YOU!!!

So, Saturday morning came and as the day went on, I was left with nothing in my body anymore….sorry if that's too much info! I was sicker than I'd been in a long time and I was SOOOO mad about it! My parent's had given all of us tickets at Christmas to see Chris Tomlin in concert. Saturday night was the concert, right in our town, at the pavilion. When we first got the tickets, I didn't really want to go and my mom knew that. It was the same day as the Jayhawk's last regular season game against Baylor in Waco. I had planned on attending the game in person! Last time I saw them play in Texas they went on to win a National Championship! Oh well, didn't plan to attend the game anymore and as the concert approached, I was looking forward to hearing all the great songs we sing at church live! I didn't get to go since I was still not feeling well at all and had no energy! I was so bummed I missed the concert. Mike sent me 3 videos from the concert throughout the night. It's amazing how great Chris Tomlin sounded live. Mike said the concert was great! Lots of praise and worship. I love how I could hear him singing along with every video he sent me! (BTW, the Jayhawks lost miserably to Baylor….besides the TCU game, it was the worst one I've seen all year!)

Sunday, I wasn't getting sick anymore, but I still didn't feel good and my energy wasn't back at all. Mike was great all weekend and got me saltine crackers, gatorade, and ginger ale. I was able to eat normal food last night, but only a couple of bites and then I felt full! Of course my mom asked that question…."Are you pregnant?" NO MOM! AND EVERYONE ELSE FOR THAT MATTER! Just a stomach bug that came at a bad time. I'm feeling much better today, more energy and all!

HAPPY EVERYTHING

When life is good and you have things to be thankful for, you can say HAPPY EVERYTHING! Even when life doesn't seem to be going your way, there are always things to appreciate and celebrate...because things could be worse. Everyday should be a day worth celebrating…..a day to thank God for the many wonderful things in your life. The company COTON-COLORS came up with the perfect piece of decoration to celebrate all those fun, happy times in your life, with the Happy Everything Platter.

When I first got married I wanted a platter for every holiday.  I got lots of football platters, basketball platters, Christmas plates, and a Valentine's cake plate that turned into a chip and dip set if you flipped it over! However, I realized if I kept getting platters for every single holiday, I wouldn't have anywhere left in my cabinets for them! 

Fast forward to June 2012….I was in a little store on Market Street and saw the HAPPY EVERYTHING platter. I immediately told my mom about it and sure enough, a month later, I opened it on my birthday. (I might be a little spoiled!) My platter is the big one and every platter has a heavy duty strip of velcro and you buy attachments to celebrate all the good times in life. You can switch out attachments so easily!

I love my platter and it sits on my kitchen table all year! February-March is a busy season for the attachments to be switched out. There's a lot going on during these two months! Take a look at what I'm talking about!


The first of February, the heart went up....and came down on the 22nd.


February 23rd wasn't the official start of Rodeo Houston, but close enough......the trail riders were coming in around that time!


Even though the rodeo was still going on, March 1st signified MARCH MADNESS, so up went the basketball!


Today the St. Patty's day attachment went on and unfortunately, will only be up for one week.


The day after St. Patrick's day, the Easter attachment will go on....and the day after Easter, the basketball will go back up for the FINAL FOUR!

Chicken pot pie with a parmesan cheese crumble topping


I found this recipe on www.getoffyourbuttandbake.com and I knew I had to make it! It sounded so savory. However, I'm kind of weird when it comes to soups, pot pies, or anything really warming……I can only make them when it's cool or cold outside! Thank goodness this week called for a few cool nights! Last night the low was 38, so I decided to make it then. Don't be scared by the number of ingredients or directions. It's pretty easy and you can take a few short cuts! I enjoy spending extra time in the kitchen, so for me it's therapeutic!

I'm off for a quick run and then heading out to see my grandfather who underwent surgery yesterday. Hope y'all have a great Wednesday! 

INGREDIENTS:


-FOR CRUMBLE TOPPING
2 cups flour
2 tsp. baking powder
¾ tsp. salt
½ tsp. pepper
⅛ tsp. cayenne pepper
6 Tablespoons chilled unsalted butter, cut into ½” cubes
¾ cup Parmesan cheese
1 cup heavy cream or half & half


-FOR THE SAUCE MIXTURE
1 cup frozen peas
* can substitute 1 cup of steamed broccoli pieces – Break in very small pieces, or chop
2 cups cooked chicken breasts (*use Rotisserie chicken to make it easier!)
 or boil chicken 3 large breasts or about 6 tenders until tender. Cool then tear into small pieces
1 or 2 carrots sliced very thin 
-FOR THE SAUCE
⅓ cup Butter- melted
¼ cups Cornstarch, dissolved in ½ cup COLD Water
½ cups Chicken Broth
¼ tsp. Salt (add more if desired)
¼ tsp Pepper
½ tsp sugar
¼ tsp red pepper flakes (opt) (I included this ingredient and we loved it…if you have little ones you may want       to omit)
2 Cups Milk (use 2% or Whole milk)
1½ to 2 cups of grated Cheddar Cheese

DIRECTIONS FOR CUMBLE TOPPING

In a large bowl, combine flour, baking powder, salt, pepper and cayenne. 


Sprinkle butter pieces over top of flour mixture. Using a pastry blender or your fingers, cut or rub butter into flour mixture until it resembles coarse cornmeal. 


Stir in the Parmesan cheese. Add cream and stir until just combined. 


Crumble mixture into irregularly shaped pieces and put them onto a baking sheet.


Bake at 450 until fragrant and starting to brown (10 to 13 min). Set aside.

DIRECTIONS FOR SAUCE AND MIXTURE

In saucepan over medium heat, melt the butter, then salt, pepper, pepper flakes and the sugar. Stir well.


Add the cornstarch dissolved in cold water, chicken broth, and milk.
Add the thinly slice carrots. (opt) Stir well, and continue stirring until sauce has thickened, stirring  constantly.


Turn heat down to low, and add 1- ½ to 2 cups grated cheddar cheese. Stir until melted. (Do not let sauce boil)


Add peas and chicken pieces and stir well to combine.


If sauce becomes too thick, simply add more milk or more chicken broth until it reaches your desired consistency.

You can use a 9×13 inch glass baking dish or make individual Pot Pie crumbles.
Pour mixture into 9×13 pan or small individual size oven safe dishes.


Scatter half baked crumble topping evenly over the filling.
Bake at 400 until filling is hot and bubbly and topping is well browned. (about 12-15 minutes)

Running Cold!

Mike and I had quite the weekend! Friday early evening, we went to the health and fitness expo for our race on Saturday. I'm not sure it should have really been called an expo. It was outside, in a parking lot, under tents….….I'm pretty sure someone dropped the ball! Last year it was at one of the large churches out here and was set up really nicely! Oh well, we picked up our packets, Mike got a 2013 half marathon shirt and we left to meet friends Traci and Carl and their precious boys at one of our favorite pizza places. It was a great visit and a good carb load before our early bedtime. 


Saturday morning came early…4:30 to be exact! We were a little slow getting out the door, but that's okay since it was about 37 degrees outside………the earlier we got there the longer we'd be outside not running to warm up! We went to check our bag with our jackets for after the race, Mike left for his start line for the half, and I headed to my 5K start. Mike's ankle was bothering him and I was worried about him running 13.1 miles on it…..especially because once I started running I felt how tight my ankles were after standing around in the cold for 30 minutes! Thank goodness they loosened up once I got into my running groove, and Mike felt okay during his run, but not so much afterwards. My wonderful mom came out to watch me run! I saw her around mile 1 and then at the finish line also. She even saw Mike at his start and stayed with me while I waited for him to come through the finish line. It was so very cold and a little windy...I had my sleeves pulled over my hands my entire run and once I had finished, I could barely feel my hands and fingers! Despite the cold weather, I finished 4 minutes faster than the weekend before at the Rodeo Run, which I was really happy with, and Mike finished 5 minutes faster than any other half marathon he had run before! Apparently we run faster in cold weather! We left the race with my mom and met my dad at Einstein's (second weekend in a row!) and then headed home to watch the Jayhawks win! For our celebratory dinner, we went to Fuddrucker's, which was perfect for  putting some calories back in our bodies! We passed out early since we were up before dawn.




Sunday was pretty lazy! We went to Cheesecake Factory for a late lunch and by the time we got home, we were both feeling pretty run down. I think our Saturday was extremely tiring, but after another early bedtime and we are both feeling good this morning!

Today the madness begins!


MARCH MADNESS that is!

It's been a busy few days! Wednesday night I had the pleasure of spending the evening with my grandmother while my Grandad and aunt went to see Alan Jackson at the rodeo. We had just finished eating dinner and were sitting down to watch tv when my mom showed up and surprised us! It was a great night of visiting and taking a few strolls down memory lane. Thursday I went for my last run before another 5K race I have tomorrow morning. I met my friend and neighbor, Amanda for lunch, and then took my car to get an oil change….which is one of my top 5 LEAST favorite things to do! Something that shouldn't take long at all, for some reason takes an hour and 45 minutes! This morning, after several days of having to smell Carly, I called the vet to see if I could get her in. She pretty much stunk for days, which isn't like her at all. We thought maybe she had an ear infection, but turns out her ears look perfect. After a $152 vet visit, we came home with indigestion meds, and a mouth rinse. How do dogs use mouth rinse you ask…..well you have to massage it into the back corners of their mouth……WHICH I'M SURE IS GOING TO OVER SOOOOO WELL and will be LOTS OF FUN for me! 

Today is March 1st, which begins one of my FAVORITE months of the year!!! It's called March Madness because the NCAA men's basketball tournament starts towards the middle of the month! Anyone who knows me knows I LOVE Kansas Basketball! I may have only attended KU for two years, but I will always be a Jayhawk! Some of my best memories are attending games at Allen Fieldhouse. There's so much tradition and history there. The inventor of the game of basketball, Dr. James Naismith, was the school's first coach. In fact, he's the only KU coach with a losing record. If you've never seen the documentary on ESPN called "There's No Place Like Home," I would STRONGLY suggest you watch it. It shows just how dedicated and CRAZY KU fans are. It's the one team that I have NEVER given up on. They rarely have bad years, and some would say the bad years are when they lose to small schools in the first or second round of the tournament. Those losses are HARD, but no fan ever gives up on the 'Hawks! I hope one day I'll be able to take Mike to a game in 'the phog' because it's an experience unlike any other!

Here's a recipe I made a couple game days ago. I'm sure I'll be making it again in the next few weeks when the tourney starts and the true madness begins! 
ROCK CHALK JAYHAWK GO KU!!!!!!!!!!!!!!!!!

Potato Skins 
(adapted from The Pioneer Woman)

INGREDIENTS:

  • 8 whole Russet Potatoes
  • 4 Tablespoons Canola Oil
  • 2 Tablespoons Butter
  • Salt To Taste
  • 1-1/2 cup Grated Cheddar Cheese
  • 8 slices (or more!) bacon, fried and chopped into bits
  • 2 whole Green Onions, Sliced (I UNFORTUNATLEY, forgot these at the store….they would have been much prettier with them!)
  • 1/2 cup Sour Cream

DIRECTIONS:

Preheat oven to 400 degrees.

Scrub potatoes clean and allow them to dry. With a paper towel (or just with your hands) rub the skin of the potatoes with 2 tablespoons canola oil so that they're nice and moist.


Place potatoes on a baking sheet and bake until skin is crisp and potatoes are tender, about 30 to 40 minutes.

Remove the pan and allow to cool until you can handle the potatoes.

Cut potatoes in half lengthwise. Scoop out the insides, leaving a little bit of potato in the skins.

Melt the butter with 2 tablespoons canola oil, then brush both the outside and the inside of the potatoes. Sprinkle the inside lightly with salt.

Place potato halves face-down and return to the oven for 5 to 8 minutes. Using tongs, turn the potatoes over and continue to bake until the edges of the potatoes start to turn golden brown.

Remove from oven. Sprinkle the insides of the potato skins with cheddar, then sprinkle on the chopped bacon.


Return to the oven long enough for the cheese to melt, about 3 to 4 minutes.

Serve immediately with sour cream and green onions. Yum!
